This recipe from one of my friends who borrowed it from the Russian Heritage Cookbook. It's Russian oladushki, or pancakes.
We tried this recipe at the Navruz celebration this year, and everyone loved them.
These pancakes are very tender, fluffy, and light. Make them and you won't stop eating :)
Separate the yolks from the whites |
4 eggs, separated
1/2 cup sugar
1 1/2 cups sour cream
1 1/4 cups flour
Butter
Directions:
1. Beat egg yolks with sugar until white.
2. Blend in sour cream and slowly sprinkle in flour.
I used a mixer to make the batter |
3. Beat whites stiff and carefully fold into the batter.
4. Drop from ladle onto hot buttered crepe/pancake pan. Oladushki should be about 3-4 inches across.
5. Flip when the bottom side is slightly browned.
This recipe makes about 15 oladushki.
These pancakes are delicious served with homemade jam or sour cream.
